How is Egg Protein Powder made?
Egg protein powder is made from the egg white, excluding the yoke which has a high fat content. Once the egg white has been separated from the yoke it is pasteurized to prevent salmonella and deactivate the avidin content. The avidin in egg protein has been shown to bind with biotin and can lead to biotin deficiency which can cause hair loss and dermatitis. This is why eggs should always be cooked or pasteurized. Once this has been done the egg white is normally spray dried to make the protein powder.
